Almond Milk

  1. Soak 1 cup of almonds over night in water (cover boawl with a cloth), you can do this for up to 2 days in the fridge.. the longer you leave them, the creamier the milk is.
  2. rinse and drain the almonds ( the water will contain phytic acid which is not good for you)
  3. add the almonds to 2 cups of water, and blend for 2 mins... a food processer may take twice as long. you can add honey or a date to sweeten
  4. strain the almonds out of the milk. you should get about 2 cups of milk. 
  5. use the left over almonds to your cakes :)

1kg of almonds make around 24 cups of milk

 

Coconut Milk

  1. blend 1 cup of shredded/ desiccated coconut with 2 cups of HOT (not boiling) water (you can sweeten with vanilla, berries or cocoa)
  2. strain the coconut out of the milk. you should get about 2 cups of milk
